Avocado pudding, are you sure about that?
I remember when I first mentioned avocado pudding back in January when we began to change our diet. Hubby was not to keen on the idea. Amazing how the less options you have the more appealing some things may become. I have heard, from friends who have tried making avocado pudding, say that it tastes like avocado mixed with chocolate. This was not my goal. The hope was to make a rich creamy pudding that people would be shocked to find out was made with an avocado base.
Thankfully, I found that pudding recipe. This pudding by Laura Miller creator of Raw Vegan not Gross is truly delicious!!! I remember the first Laura Miller video I saw on Tastemade. Watching her make the delicious food in her videos opened my eyes to a whole new world of options. It was exciting to learn that just because we could not have gluten, dairy or eggs we still had plenty of yummy food options.
Avocado Chocolate Pudding ~ Laura Miller
-2 large avocados
-½ cup agave or maple syrup
-½ cup cocoa powder (I only had dark chocolate cocoa powder so it turned out extra dark and rich.)
-3 T coconut oil
-1/2 t balsamic
-1/2 t nama shoyu
-¼ t salt
Place in a food processor and blend until smooth and creamy. You can place in freezer to cool quickly or keep it in the fridge.
