Chicken and Broccoli Pasta with Cream Sauce, Gluten and Dairy free
Gluten and dairy free deliciousness.
The other night I had no idea what to make for dinner. Do you ever have those nights where a trip to the grocery store is over due and you have to get creative? On this particular evening my fridge was looking pretty bare. I did notice that I had my cashew cream with pulp that needed to be used. Chicken and broccoli in garlic cashew cream sauce, gluten and dairy free
Ingredients:
- 1 lb chicken cut into pieces
- 2 cups broccoli chopped
- Olive oil
- Salt
- Pepper
- Granulated garlic
- 1 cup diced tomatoes
- Gluten free pasta
For the sauce:
- 1 cup cashew cream with pulp, or cream of choice
- 1 clove garlic
- 2 tablespoons nutritional yeast
- Salt
- Pepper
- a few tablespoons of white wine (or broth)
Instructions:
- Cut your chicken into bite size pieces. I personally like to use thighs. Season with salt, pepper and granulated garlic.
- Prepare a pot of water and bring to a boil for your pasta. Cut broccoli and tomatoes into pieces and set aside.
- Heat skillet coated with olive oil over medium heat. Add chicken. Turn down to low heat.
- When chicken is almost cooked through you can add your broccoli. I added a dash of salt and pepper after adding the broccoli. Pour a splash of white wine or chicken broth onto skillet and cover with lid. Allow broccoli to steam.
- Cook pasta according to package directions.
- Sauce: You can prepare the sauce while your pasta is cooking.
- Pour your cashew cream into a sauce pan over medium heat. You can then add your pressed or chopped garlic clove and nutritional yeast. Don’t be shy with your splash of white wine.
- Salt and pepper cream to taste. Mix until heated through and creamy. If sauce needs thickening you can use gluten free corn starch or thickener of your choosing.
- Mix noodles in with chicken and broccoli.
- You will then add your sauce and coat the noodles. Add more seasoning as needed. If you are a fan of spicy foods this dish would go great with some red pepper flakes.
When we became a gluten and dairy free household I thought white sauces and pasta were a thing of the past. Thankfully I was wrong. What is your favorite pasta dish?
